Neuhaus’ Maîtres Chocolatiers present four exclusive chocolates, each distinguished by its depth of flavor and sophistication. A 64% cocoa variety from Peru stands in for conventional dark chocolate throughout the collection, while chickpea protein concentrate replaces traditional milk powder. White chocolate and caramel fillings have been reworked too — coconut fat takes the place of milk fat, and plant-based pea protein steps in for dairy components. A fruit purée of mandarin and yuzu delivers an exquisite finishing touch, replacing the cream found in traditional ganache. The result: chocolates that are not only palm oil-free but built entirely on 100% sustainably sourced cocoa.
