From Family Oyster Farm to Mediterranean Luxury Retreat
In 1986, Florent Tarbouriech and his wife Sabine took over his father Pierre’s small oyster farm. With the ambitious goal of bringing the Mediterranean oyster into fine dining, the couple set about refining traditional oyster-farming methods together.
In 2006, they were finally granted a patent for their environmentally friendly, nature-based farming method, Marée Solaire. The system consists of a structure on which the oysters attach once they reach about 3 cm in size; each day, at regular intervals, they’re lifted from the lagoon’s water, allowing them to develop their shape freely. Powered by solar panels and wind turbines, the technique enables 100% ecological oyster production.
But Florent Tarbouriech didn’t stop at oyster farming — he transformed the entire estate into a destination for culinary and cultural discovery. Guests today can stay in one of 15 modern, luxuriously appointed accommodations, including a 13th-century farmhouse topped with a traditionally thatched reed roof. Both the Deluxe and Residence rooms are richly detailed and thematically designed; one, for instance, channels the free-spirited energy of Casanova, who once spent time not far from the estate.

Organic, Seasonal Indulgence
The estate’s restaurant, La Folie, treats guests to organically grown, seasonal food throughout. Domaine Tarbouriech is known above all for its pink oysters, which resident chef Nicolas Lesseure prepares in a range of creations, some traditional, some thoroughly modern. The menu is rounded out by a selection of local wines, chosen to strike the right balance between personal preference and the oyster’s distinct character. Beyond its fine dining, the estate places real weight on working with sustainable, environmentally responsible suppliers from the region.
Spa and Wellness
After a long walk through the neighboring vineyards, the estate’s spa is the place to unwind. The 400-square-meter wellness haven offers a range of treatments, including massages, baths, and beauty rituals. Drawing on the principles of Traditional Chinese Medicine, where oysters have long played a role in restorative skincare, the Tarbouriech family developed Ostréathérapie®, working with professional laboratories to create natural oyster-based skincare products for the estate’s spa and wellness program.
