Sustainable Indulgence: Regional, Organic, and Vegetarian at Restaurant L’Horizon
Executive chef Philippe Joannès and his team favor regional and organic ingredients at the hotel’s own Restaurant L’Horizon, alongside a generous selection of vegetarian dishes.
To that end, the Fairmont Monte Carlo has planted its own garden, Les Terres d’Antoine, in the hills behind Nice, where fruit and vegetables are grown for the kitchen. It cuts out unnecessary transport and keeps everything on the plate remarkably fresh. The hotel is equally deliberate about sustainable fishing practices, keeping endangered species such as bluefin tuna off the menu entirely.
Waste reduction, sorting, and recycling are taken seriously throughout the hotel. Much of the material used comes from eco-friendly production — menus, for instance, are printed exclusively on recycled paper, and napkins are linen rather than disposable.
Guests who wish can arrange an electric car rental through the hotel. Those who arrive by electric vehicle in the first place get free use of the hotel’s parking, which otherwise runs €40 a day, along with a complimentary charger.
Anyone seeking calm and a little pampering will find it at the Willow Stream Spa.
The hotel’s spa partners exclusively with internationally recognized brands specializing in natural ingredients, including Kerstin Florian, Aromatherapy Associates, and Jane Iredale.
